The IFT19 -
Feed your future event was held in New Orleans, the United States in June
2-5th, 2019. This large half-conference, half food expo of over 15000 attendees
works as a bridge between scientists, food companies and new startup companies.
It was organized by the Institute of Food Technologists (IFT). Research team
leader Emilia Nordlund and Senior scientist Dilek Ercili-Cura were the
representatives of VTT at this annual meeting and their presentations
demonstrated the work VTT does towards reaching Food Economy 4.0 goals.
Nordlund presented the VTT approach to hybrid ingredients: dry fractionation
can yield high-protein and high-fibre ingredients from sidestreams while enzyme
treatments and fermentation can improve the functional properties such as
protein solubility and gelling properties. On the other hand, Ercili-Cura highlighted
modern techniques for cellular agriculture: cells can produce protein directly
from the air and animal proteins such as milk and egg proteins can be
manufactured in cell factories.
