VTT’s research scientists Nesli Sozer, Dilek Ercili-Cura and Juhani Sibakov attended the IFT13 Annual Meeting and Expo, which was organised by the Institute of Food Technologists in Chicago on 13–16th July 2013.
IFT13 brought together leading national and international food and ingredient companies, entrepreneurs, food science & technology students and top scientists. The scientific program of the meeting covered a vast range of topics from innovations in ingredient and product development, emerging analyses and processing technologies to food safety matters. The structure-function relationship starting from molecules until end-products was highlighted in many posters and presentations. Bioeconomy and research needs for a sustainable food chain were discussed in dedicated sessions. Different kind of proteins took a large place both in the scientific programme as well as in the exhibition area, where new products based on plant proteins or newly designed animal proteins were showcased.
Juhani Sibakov and Nesli Sozer presented posters “Production of ultra-fine cereal bran particles and their use in beverages and extruded snacks” and “Wheat bran addition and particle size reduction have an influence on biscuit structure but not in in vitro starch digestibility."
