Protein is one of the important macronutrients and dietary energy sources with suggested nutritional benefits. VTT protein technology competence can be divided in three categories, in which considerable research effort has been made (Figure). Process-structure-property relationships become increasingly important to understand and control, when aiming at more sustainable processing and exploitation of new protein sources in the future.
