PROJECT ENDED: BERRYFERMENTATION – New berry products and berry ingredients by microbial fermentations

The aim of the BERRYFERMENTATION project (2009-2012) was to enhance industrial business activities and export potential of Nordic berries by developing new bioprocess technologies. Bioprocessing with selected and well-characterized microbes or hydrolytic enzymes was a tool to modify composition of the berry material in a comprehensive way, its nutritional value, health effects, safety, flavour, colour and shelf life. Thus, new type of berry raw-material was developed for industrial use.
