Nutritech - Rethinking the Food Chain

Dietary fibre (DF) is an important ingredient in terms of the nutritional quality of foods. As the current DF intake is too low, there is a demand for processed foods with more of DF. The range of DF ingredients is as wide as the fibre definition. A recent review discusses the physiological functionalities of three different types of DF ingredients: Cereal fibre, inulin and polydextrose, with specific emphasis to the criteria presented in the EU DF definition.
