Nutritional guidelines recommend the consumption of whole grain bread. However, most European consumers prefer white bread since expectations regarding taste and texture of wholegrain bread are not met. At the moment, endosperm with starch and protein as main components and low content of fibre and bioactive compounds is used for baking whereas germ and bran that contain high levels of fibre and bioactive compounds such as vitamins, minerals and beneficial phytochemicals are mostly utilized as feed.
