NEW PRESENTATION about food structure characterization

International Food, Agriculture and Gastronomy congress was held in Antalya, Turkey on 15-19 February 2012. Dr Nesli Sozer gave a lecture titled “Characterization of structural architecture of cellular solid food materials”. The core topics of the presentation were why texture-structure in food design is important and how microstructure can be characterized with imaging techniques. The lecture covered Dr Sozer’s current research in VTT and previous postdoctoral research from Rutgers, The State University of New Jersey and University of Illinois Urbana-Champaign.
