Oats are rich in lipids and many properties of oats can be attributed to the high lipid content. Oat contains nutritionally attractive fatty acids, sterols and lipid soluble vitamins. On the other hand the high lipid content can also have an adverse effect on the sensory quality of oat products and special attention should be paid to minimize the occurrence of lipid deteriorating reactions.
