NEW BOOK: Chemistry and Biology of Ellagitannins

The book covers, for the first time, the chemistry and biology of polyphenolic ellagitannins. It addresses the unique structural diversity of these polyphenols, their natural occurrence, the current knowledge of their biogenetic origin, the main biological activities, their presence in food and beverages, and their health impacts.
It also reviews the Finnish studies carried out by University of Kuopio and VTT on ellagitannin content of berries such as strawberries, raspberries and cloudberries, and on the antimicrobial properties of berries rich in ellagitannins. The book was edited by professor Stéphane Quideau, University of Bordeaux, France.
