Recent events in the field of sensory science

The 14th Nordic Workshop on Sensory Evaluation organised on 5th-6th October 2011 in Snekkersten, Denmark was held with a topic ‘Sensory Professionalism’. European Sensory Network (ESN) meeting was held on 12th -14th October 2011 in Rome, Italy. The keynote presentations of the ‘Futuristic Approaches Observation and 3D’ workshop covered presentations on Observational techniques applied to the study on children’s eating behaviour and Virtual and augmented reality for user centred innovation.

The event started with a workshop on the topic of ‘Futuristic Approaches Observation and 3D’ which covered presentations on Observational techniques applied to the study on children’s eating behaviour and Virtual and augmented reality for user centred innovation. The workshop was followed by a two-day meeting. Dr. Raija-Liisa Heiniö presented VTT in both meetings. She held a workshop in Nordic Workshop on Sensory evaluation and acted as a moderator in ESN workshop.

Nordic Workshop on Sensory Evaluation

The presentations on the theme ‘Sensory Professionalism’ covered all classical areas of sensory evaluation: evoke, measure, analysis, interpretation and implementation. Presentations of face reading, bitterness sensation, scales, statistics, prediction of food choice and the 6th basic taste kokumi were heard by more than 80 participants. Aimo Tiilikainen from VTT Expert Services gave a presentation on sampling. Two workshops were held during the workshop: ‘Emotions and food choice’ by Annika Åström from The Swedish Institute for Food and Biotechnology (SIK) and Raija-Liisa Heiniö from VTT. The second workshop was with a very useful topic ‘Rapid sensory methods’ (mapping and holistic methods) and it was held by Danish Technological Institute (DTI).

Nordic Workshop on Sensory Evaluation is arranged every two years by VTT, SIK (Sweden), DTI (Denmark), NOFIMA (Norway) and MATIS (Iceland). The 15th Nordic Workshop in Sensory Science will be arranged on 14th – 15th May 2013 in Helsinki Finland on the topic ‘Added value! - by novel methods and segmentation’.

European workshop and meeting on Sensory Evaluation

VTT is a member of the European Sensory Network (ESN) since 1994. The ESN meetings are held twice a year. This time 70 ESN research members and industrial members from big multinational companies mainly from Europe, but also from Canada, Australia and South Africa gathered together in the Rome meeting. The keynote presentations of the ‘Futuristic Approaches Observation and 3D’ workshop covered presentations on Observational techniques applied to the study on children’s eating behaviour and Virtual and augmented reality for user centred innovation. The interesting practical part of the workshop included five parallel sessions on Real life situations, Eye-tracker, Pets observation techniques, Observational method of consumer studies in the Restaurant of the Future, and Mini VAS approach by Givaudan.

The current state of the on-going projects was presented as well as the topics of the new research projects were voted in the meeting. Raija-Liisa Heiniö acted as a moderator in the Review of skills within ESN Networks workshop. Numerous initiatives for new co-operations as projects or other activities raised in the discussions with the scientific colleagues and the industry partners.
